Rhubarb Juice

A few weeks ago I had the pleasure of sampling my first glass of rhubarb juice.  It was amazing!!  While I love the taste of a good rhubarb berry crisp... and who doesn't?  I might love the taste of the Rhubarb Juice a little bit more. 

I really encourage you to try it, you will love it.

It is simple and economical to make. 

Instructions for a large batch of juice:

  • Use 6 cups of diced rhubarb, fresh or frozen.

  • 12 cups of water

  • Honey to taste

Place the water in a large pot. Bring the water to a boil, then add rhubarb. Turn down to a simmer. Let the mixture simmer until the rhubarb is softened. Remove from heat and let cool. Strain the mixture into jars or a large pitcher. Add honey to taste. Pour the mixture over ice... You will love it.
